You might have already noticed, that we love banana bread (have a look at our vanilla banana bread with dates or our banana bread with cranberries and dried pomgranate seeds), but this time we thought we should give it a try with banana muffins. and actually they are already pretty delicious without the frosting, that´s why we just call them muffins and not cupcakes. but if you put the frosting on top they are even a little bit more delicious (cherry and banana, that´s just the best classic combination, isn´t it?). so call them whatever you like, eat them with or without frosting, but just give it a try, it´s totally worth it.

Ingredients for 12x banana-cherry-muffins
muffin-dough:

4 ripe bananas (middle size)
80g butter (room temperature)
2 eggs
160g rice flour
120g cane sugar
2,0tl tartar baking powder
1 dash salt
1 vanilla pod
200g frozen cherries
cherry-frosting:
200g mascarpone
50g cherry jam
30g cream cheese
10g icing sugar

topping:
white grated chocolate (use a knife to grate from a chocolate bar)
hazelnut brittle

muffin dough:
preheat oven to 180grad (top-/bottom heat). beat butter, sugar and a dash of salt, then stir in the eggs. mix rice flour, salt and tartar baking powder and sift in 3 portions to the butter-egg-mix and stir in. purée the bananas and add together with the vanilla seeds to the dough – mix thoroughly. fold in the frozen cherries. line the muffin tin with muffin cups and fill the dough into the cups. bake the muffins at 180 degrees celsius for 30-35min, then take them off the muffin tin and let cool on a cooling rack.

cherry-frosting:
mix mascarpone, cream cheese and icing sugar, then stir in the cherry jam. fill the frosting into the decorating tube – put the frosting eventually for a while in the fridge, if it is still too soft. decorate the muffins with the cherry-frosting and sprinkle some grated white chocolate and hazelnut brittle.

Heute teilen wir das dritte rezept, das wir für “freunde von freunden” kreiert haben mit euch. Unsere gute freundin ezgi polat hat ein schönes behind-the-scenes bild von uns gemacht, liebsten dank dafür!

vielleicht ist es dem einen oder anderen ja schon mal aufgefallen, dass wir eine kleine leidenschaft für banana bread haben. wir haben z.b. schon unser vanille banana bread und unser banana bread rezept mit getrockneten granatapfelsamen mit euch geteilt  und einmal haben wir es sogar nur noch geschafft ein halbes banana bread zu fotografiern, weil es zur hälfte schon fast aufgegesen war.

aber weil wir schon ewig keine muffins mehr gegessen haben, dachten wir uns, wir versuchen es mal mit bananen-muffins. die sind auch schon ohne das frosting ziemlich lecker geworden, deshalb nennen wir sie auch einfach muffins und nicht cupcakes. aber natürlich ist er auch mit dem kirschfrosting (wer kann schon was gegen die klassische kombination banane-kirsch sagen?!) köstlich. also nennt sie wir ihr wollt, esst sie mit oder ohne frosting, probiert es einfach aus. wir hoffen sie schmecken euch genauso gut wie uns und habt noch einen schönen tag ihr lieben!

bananen-kirsch-muffins & kirsch-creme

zutaten für 12x bananamuffins
muffin-teig:
4 reife bananen (mittelgroß)
80g butter (zimmertemperatur)
2 eier
160g reismehl
120g rohrzucker
2,0tl backpulver
1 prise salz
1 vanilleschote
200g tk-kirschen
kirsch-creme:
200g mascarpone
50g kirschmarmelade
30g frischkäse
10g puderzucker

topping:
weisse schokoladenraspeln (einfach mit dem messer von einer tafel schokolade abraspeln)
haselnusskrokant

muffin-teig:
ofen auf 180grad (ober-/unterhitze) vorheizen. butter, zucker und eine prise salz aufschlagen, die eier anschliessend unterrühren. reismehl, salz und backpulver vermischen und in 3 teilen dazusieben und unterrühren. dann die bananen pürieren und zusammen mit dem mark der vanilleschote zum teig dazugeben und alles gut verrühren. kirschen unter den teig heben.

ein muffinblech mit muffinförmchen auskleiden und mit dem teig befüllen. bei 180grad 30-35min backen, dann muffins aus dem backlech heben und auf einem kuchengitter vollständig abkühlen lassen.

kirschcreme:
mascarpone, frischkäse und puderzucker gut verrühren, dann die kirschmarmelade unterrühren. creme in eine spritztülle füllen und evt. noch etwas in den kühlschrank legen, falls die creme noch zu weich ist. die kirschcreme auf den muffins verteilen und mit weissen schokoladenraspeln und haselnusskrokant dekorieren.
