Today we share a recipe for a very delicious and easy glutenfree apple cake with you. It took a while until we finally had the time to post it now, but we have spend a wonderful time in Copenhagen (posts will follow). But first of all we want to tell you about our feature in Jessica’s online-magazine, Best Wishes Mag. We talked about our hometown Berlin with her, so have a look if you are interested. And now let’s start with the recipe for this delicious cake!

Ingredients (for a springform pan 18-20cm ø)
80g butter (o. margarine)
125g cane sugar
1 egg + 1 eggyolk
125g rice flour
1 tl tartan baking powder (e.g. from biovita)
1 tl cinnamon
1 dash of salt
2 apples (e.g. variety elstar)
Some icing sugar for decoration

Preheat oven to 160 degrees top/bottom-heat. For the dough mix first sugar and butter, stir in the egg and eggyolk. At last sift rice flour and tartar baking powder to the mass with a dash of salt, the cinnamon and mix again. Cover the springform bottom with baking paper. Peel the apples, grate one of them and cut the other into thin apple wedges. Fold the apple-grates into the dough and spread the dough in the springform pan. Coat the the dough circular with the apple wedges. Bake the cake at 160degrees for ca. 45-50min until the top and the sides starts to turn brown. Leave the cake outside to cool down and take away the springform pan and baking paper after 10min and dust the cake with icing sugar (put the cake on the oven-grid outside, so air can circulate from all sides).

Serving-tipp: freshly whipped cream always fits quite well to an apple-cake – but only for those, who can and like to eat cowmilk-products.

Unser leckeres Apfelkuchen-Rezept hat nun doch etwas länger auf sich warten lassen, was daran liegt, dass wir die letzten Tage im schönen Kopenhagen verbracht haben…aber dazu in den nächsten Posts mehr! Erstmal wollten wir euch noch von unserem Feature im Best Wishes Magazin erzählen. Als die liebe Jessica, Gründerin vom Best Wishes Magazine, uns gefragt hat, ob wir für ihr Magazin unsere “Story” schreiben wollen, waren wir sofort begeistert und haben ihr natürlich zugesagt. Getroffen haben wir uns in unserem Lieblingscafé Dolly, aber lest selbst: hier. Und nun aber zum saftigen Apfelkuchen! Der kleine schöne Teller mit dem Zimt, ist ürbigens von Schoeming Porzellan, hier von uns vorgestellt. Bei Zimt müssen alle Histaminintoleranten natürlich aufpassen! Wir haben jetzt schon öfter gelesen, dass Zimt von einigen nicht so gut vertragen wird. Laura hat damit zum Glück keine Probleme. Welche Erfahrungen habt ihr bisher mit Zimt gemacht?

Zutaten (für eine Springform ca. 18-20cm ø)
80g Butter (o. Margarine)
125g Rohrzucker
1 Ei + 1 Eigelb
125g Reismehl
1 TL Weinsteinbackpulver (z.b. von Biovita)
1 TL Zimt
1 Prise Salz
2 Äpfel (z.B. Sorte Elstar)
Etwas Puderzucker zum bestreuen

Ofen auf 160 Grad Ober-/Unterhitze vorheizen. Für den Teig zunächst Zucker und Butter miteinander vermengen, Ei und Eigelb untergeben, dann das (gesiebte) Reismehl, Zimt, Salz und Backpulver. Den Boden der Springform mit Backpapier auslegen. Die Äpfel schälen, einen Apfel kleinraspeln und unter den Teig mischen. Den Teig in der Springform verteilen. Den zweiten Apfel in feine Spalten schneiden  und den Teig kreisförmig belegen. Bei 160 Grad für ca. 45-50min in den Backofen, bis die Oberseite und der Rand anfängt braun zu werden. Abkühlen lassen für 10min, aus der Springform nehmen und auf einem Gitter weiter abkühlen lassen. Mit Puderzucker bestäuben.

Servier-Tipp: gut zu einem Stück Apfelkuchen passt immer auch frisch geschlagene Schlagsahne – für diejenigen, die Kuhmilchprodukte vertragen und kaufen.
